Ingredients

  • 4 medium-sized chicken breasts
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a mixing bowl, combine the shredded cheddar cheese, crumbled bacon, and 1/4 cup of BBQ sauce. This will be your stuffing.
  3. Pat the chicken breasts dry with paper towels. Using a sharp knife, carefully cut a pocket into each chicken breast, taking care not to cut all the way through.
  4. Season the outside and inside of the chicken pockets generously with garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Stuff each chicken breast with the cheese and bacon mixture, dividing it equally among the breasts.
  6. Drizzle olive oil over the stuffed chicken breasts and rub it all over to coat.
  7. Place the chicken breasts in the air fryer basket in a single layer. Cook for 12-15 minutes, flipping halfway through, until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
  8. In the last 2 minutes of cooking, brush the remaining BBQ sauce on top of each chicken breast for added flavor.
  9. Once cooked, remove the chicken from the air fryer and let it rest for 5 minutes before slicing.

💡 Chef's Notes

Slice each chicken breast in half to reveal the gooey filling, and serve on a platter garnished with chopped fresh parsley and additional BBQ sauce drizzled on top.
