Ingredients

  • 1 cup pitted dates
  • 1 cup unsweetened shredded coconut
  • 0.5 cup almond butter
  • 0.25 cup almond flakes
  • 0.5 cup rolled oats
  • 2 tablespoons cocoa powder
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 0.25 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Begin by placing the pitted dates in a food processor. Pulse until the dates form a sticky paste.
  2. Add the almond butter, honey (or maple syrup), sea salt, and vanilla extract to the food processor. Pulse again until the mixture is well combined.
  3. In a large bowl, combine the shredded coconut, almond flakes, rolled oats, and cocoa powder. Mix well.
  4. Pour the date-almond butter mixture into the bowl with the dry ingredients. Mix thoroughly using a spatula or your hands until everything is evenly incorporated.
  5. Once combined, take small portions of the mixture and roll them into 1-inch balls.
  6. Place the energy bites on a baking sheet or a plate lined with parchment paper.
  7. Refrigerate the energy bites for at least 30 minutes to firm them up.

💡 Chef's Notes

For an optional twist, roll some of the balls in additional shredded coconut or cocoa powder for extra flavor and texture.
