Almond Joy Energy Bites Tasty and Healthy Snack
Ingredients
- 1 cup pitted dates
- 1 cup unsweetened shredded coconut
- 0.5 cup almond butter
- 0.25 cup almond flakes
- 0.5 cup rolled oats
- 2 tablespoons cocoa powder
- 1 tablespoon honey (or maple syrup for vegan option)
- 0.25 teaspoon sea salt
- 1 teaspoon vanilla extract
Instructions
- Begin by placing the pitted dates in a food processor. Pulse until the dates form a sticky paste.
- Add the almond butter, honey (or maple syrup), sea salt, and vanilla extract to the food processor. Pulse again until the mixture is well combined.
- In a large bowl, combine the shredded coconut, almond flakes, rolled oats, and cocoa powder. Mix well.
- Pour the date-almond butter mixture into the bowl with the dry ingredients. Mix thoroughly using a spatula or your hands until everything is evenly incorporated.
- Once combined, take small portions of the mixture and roll them into 1-inch balls.
- Place the energy bites on a baking sheet or a plate lined with parchment paper.
- Refrigerate the energy bites for at least 30 minutes to firm them up.
