Ingredients

  • 2 large flour tortillas
  • 1 cup cream cheese, softened
  • 1 2 powdered sugar
  • 1 teaspoon vanilla extract
  • 1 2 ground cinnamon
  • 1 large apple, diced (preferably Granny Smith or Honeycrisp)
  • 1 tablespoon lemon juice
  • 1 4 granola
  • 0 Whipped cream, for garnish
  • 0 Caramel sauce, for drizzling

Instructions

  1. Begin by preparing the apple filling. In a bowl, combine the diced apples, lemon juice, and ground cinnamon. Toss until the apples are well-coated. Set aside.
  2. In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth.
  3. Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and cook for about 30 seconds on each side until warm and slightly golden. Repeat with the second tortilla.
  4. Once the tortillas are warm, spread a generous layer of the cream cheese mixture onto each tortilla.
  5. Spoon a portion of the cinnamon-coated apples onto one side of each tortilla.
  6. Fold the tortillas in half to create a taco shape.
  7. Top the tacos with a sprinkle of granola for added crunch.
  8. Drizzle caramel sauce over the top and add a dollop of whipped cream for enhanced flavor and presentation.

Serve on a colorful plate with extra cinnamon apples and a sprig of mint for garnish.
