Ingredients

  • 1 cup rolled oats
  • 1 cup almond milk (or any milk of choice)
  • 1 medium apple, diced (preferably Granny Smith for tartness)
  • 1 tablespoon maple syrup (or honey)
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon nutmeg
  • 1 tablespoon chia seeds
  • 0.25 cup Greek yogurt (optional for creaminess)
  • 2 tablespoons walnuts, chopped (for crunch)
  • to taste Fresh apple slices and a sprinkle of cinnamon for topping

Instructions

  1. In a medium bowl or jar, combine the rolled oats and almond milk. Stir well to ensure the oats are fully submerged.
  2. Add the diced apple, maple syrup, ground cinnamon, nutmeg, chia seeds, and Greek yogurt (if using) to the oat mixture, and mix until all ingredients are evenly incorporated.
  3. Transfer the mixture to an airtight container or individual serving jars. Seal tightly.
  4. Refrigerate the overnight oats for at least 4 hours or overnight to allow the oats to absorb the milk and flavors.
  5. When ready to serve, give the oats a good stir to combine. Top with chopped walnuts, fresh apple slices, and an additional sprinkle of cinnamon if desired.
  6. Enjoy your delicious Apple Pie Overnight Oats either cold or warm them slightly in the microwave for 30 seconds to have a cozy breakfast!

💡 Chef's Notes

You can adjust the sweetness by adding more or less maple syrup or honey.
