Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 4 cups mixed salad greens (spinach, arugula, romaine)
  • 1 cup red cabbage, thinly sliced
  • 1 cup carrots, grated
  • 0.5 cup cucumber, julienned
  • 0.25 cup green onions, chopped
  • 0.25 cup chopped cilantro
  • 0.25 cup toasted sesame seeds
  • 0.25 cup peanut or sesame dressing

Instructions

  1. In a large mixing bowl, combine the mixed salad greens, red cabbage, grated carrots, and julienned cucumber. Toss lightly to mix the vegetables evenly.
  2. Add the shredded chicken to the bowl and gently fold it into the greens.
  3. Sprinkle the chopped green onions, cilantro, and toasted sesame seeds over the salad mixture.
  4. Drizzle the peanut or sesame dressing over the salad, ensuring all ingredients are coated evenly.
  5. Using tongs, toss everything together gently until combined.
  6. Taste and adjust seasoning if needed, adding more dressing or salt/pepper to your preference.
  7. Serve immediately or chill for about 10-15 minutes in the refrigerator before serving to allow flavors to meld.
