Ingredients

  • 1 whole ripe avocado, diced
  • 1 cup fresh or canned corn, drained
  • 1 small red onion, finely chopped
  • 1 whole jalapeño pepper, deseeded and minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions

  1. In a large mixing bowl, combine the diced avocado and corn. Gently fold them together to avoid mashing the avocado.
  2. Add the finely chopped red onion and minced jalapeño pepper to the bowl. Stir to incorporate.
  3. Add in the halved cherry tomatoes and chopped cilantro, mixing well but gently to maintain the integrity of the avocado.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  5. Pour the dressing over the avocado corn mixture and carefully toss everything together, ensuring all ingredients are evenly coated.
  6. Taste the salsa and adjust the seasoning if necessary, adding more salt, pepper, or lime juice to suit your taste.
  7. Let the salsa sit for about 10 minutes to allow the flavors to meld.

Serve with tortilla chips or as a topping for grilled meats. Let sit for 10 minutes to enhance flavors.
