Ingredients

  • 200 g pasta of your choice (penne or fusilli works great)
  • 200 g feta cheese, block
  • 500 g cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (optional for heat)
  • to taste Salt and pepper
  • for garnish Fresh basil leaves
  • for serving Grated parmesan cheese (optional)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large baking dish, combine the halved cherry tomatoes and minced garlic. Drizzle with 2 tablespoons of olive oil, sprinkle with oregano, red pepper flakes, salt, and pepper, and toss everything together.
  3. Place the block of feta cheese in the center of the tomato mixture. Drizzle the top of the feta with the remaining 2 tablespoons of olive oil and a pinch of salt on top.
  4. Bake in the preheated oven for about 25-30 minutes, until the tomatoes are blistered and the feta is golden and softened.
  5. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Once the feta and tomatoes are out of the oven, use a fork to mash the feta into the tomatoes, creating a creamy sauce.
  7. Add the cooked pasta into the baking dish and stir to combine everything until the pasta is well coated in the cheesy tomato mixture.
  8. Serve immediately, garnished with fresh basil leaves and a sprinkle of grated parmesan cheese if desired.
