Baked Parmesan Zucchini Fries Crispy and Tasty Snack
Ingredients
- 2 large zucchinis, cut into fries
- 1 cup breadcrumbs (preferably whole wheat)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 large eggs, beaten

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well to ensure even distribution.
- In another bowl, whisk the eggs until fully beaten.
- Take each zucchini fry and dip it into the beaten eggs, ensuring it's fully coated.
- Next, roll the egg-coated zucchini fry in the breadcrumb and cheese mixture until it’s fully covered. Place it on the prepared baking sheet. Repeat this process for all the zucchini fries.
- Once all the fries are on the baking sheet, lightly spray them with cooking spray or drizzle with a small amount of olive oil for extra crunch.
- Bake in the preheated oven for 20-25 minutes, or until the zucchini fries are golden brown and crispy, flipping them halfway through for even cooking.
- Remove from the oven and let them cool for a few minutes before serving.
