Ingredients

  • 2 large zucchinis, cut into fries
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 large eggs, beaten
  • to taste salt and pepper
  • as needed cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well to ensure even distribution.
  3. In another bowl, whisk the eggs until fully beaten.
  4. Take each zucchini fry and dip it into the beaten eggs, ensuring it's fully coated.
  5. Next, roll the egg-coated zucchini fry in the breadcrumb and cheese mixture until it’s fully covered. Place it on the prepared baking sheet. Repeat this process for all the zucchini fries.
  6. Once all the fries are on the baking sheet, lightly spray them with cooking spray or drizzle with a small amount of olive oil for extra crunch.
  7. Bake in the preheated oven for 20-25 minutes, or until the zucchini fries are golden brown and crispy, flipping them halfway through for even cooking.
  8. Remove from the oven and let them cool for a few minutes before serving.

Serve the zucchini fries in a rustic basket lined with parchment paper, accompanied by a side of marinara or garlic dipping sauce for added flavor.
