Ingredients

  • 4 slices sourdough bread
  • 4 tablespoons balsamic fig jam
  • 6 ounces creamy goat cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon unsalted butter
  • 1 pinch salt
  • 1 pinch pepper
  • to taste fresh thyme leaves for garnish (optional)

Instructions

  1. Spread 1 tablespoon of balsamic fig jam evenly on two slices of sourdough bread.
  2. On top of the fig jam, spread half of the softened goat cheese, and then layer on half of the shredded cheddar cheese. Season lightly with salt and pepper.
  3. Place the remaining slices of sourdough on top to create two sandwiches, with the cheese filling in the middle.
  4. Heat a non-stick skillet over medium heat. While it warms up, butter the outer sides of both sandwiches.
  5. Place the sandwiches in the skillet. Cook for about 3-4 minutes on one side, checking for a golden brown color before carefully flipping.
  6. Once flipped, grill the other side for another 3-4 minutes until both sides are golden and the cheese is melted.
  7. Remove from heat, slice each sandwich in half, and garnish with fresh thyme leaves if desired.
