Ingredients

  • 1 large flatbread or naan
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 medium red onion, thinly sliced
  • 0.5 cup corn kernels
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a bowl, mix the shredded chicken with the BBQ sauce until well coated. Add a pinch of salt and pepper to taste.
  3. Lay the flatbread or naan on a baking sheet. Brush the surface lightly with olive oil to help it crisp up while baking.
  4. Spread the BBQ chicken mixture evenly over the flatbread, ensuring to cover it well.
  5. Evenly distribute the sliced red onion and corn over the chicken layer.
  6. Sprinkle the shredded mozzarella cheese generously over the entire flatbread.
  7. Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until the cheese is melted and bubbly, and the edges of the flatbread are golden.
  8. Once baked, remove from the oven and let it cool slightly.
  9. Sprinkle the chopped cilantro over the top for added freshness, and slice into pieces.

Feel free to add more toppings like jalapeños or bell peppers.
