Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup romaine lettuce, chopped
  • 1 cup mixed salad greens
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cup corn (canned or grilled)
  • 0.25 cup red onion, thinly sliced
  • 0.5 cup shredded cheddar cheese
  • 0.33 cup BBQ sauce
  • 0.33 cup ranch dressing

Instructions

  1. In a large salad bowl, combine the chopped romaine lettuce and mixed salad greens as a base.
  2. Add the shredded cooked chicken to the bowl. Pour the BBQ sauce over the chicken and toss until well coated.
  3. Fold in the cherry tomatoes, corn, and red onion to the chicken mixture gently.
  4. Drizzle ranch dressing over the salad and mix everything together carefully to keep the greens intact.
  5. Sprinkle the shredded cheddar cheese on top of the salad and season with salt and pepper to taste.
  6. Garnish with fresh cilantro or parsley for an added flavor and visual appeal.
