Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 6 cups mixed lettuce greens
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, thinly sliced
  • 1 cup corn kernels
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup ranch dressing
  • 0 to taste salt and pepper
  • 0 for garnish fresh cilantro

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Brush the chicken breasts with a generous amount of BBQ sauce, ensuring they're well coated.
  3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). In the last minute of cooking, brush with additional BBQ sauce for extra flavor.
  4. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then, slice the chicken into strips.
  5. In a large salad bowl, combine the mixed lettuce greens, cherry tomatoes, red onion, and corn. Toss them together gently.
  6. Add the sliced chicken on top of the salad, then sprinkle shredded cheddar cheese over the chicken.
  7. Drizzle ranch dressing over the salad and toss to combine if desired, or serve the dressing on the side for individual preferences.
  8. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
