Ingredients

  • 1 cup rolled oats
  • 1 cup almond milk (unsweetened)
  • 0.5 cup Greek yogurt (or plant-based yogurt)
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 0.5 teaspoon vanilla extract
  • 0.5 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons almond slices
  • 1 pinch salt

Instructions

  1. In a medium bowl, combine the rolled oats, almond milk, Greek yogurt, chia seeds, maple syrup (or honey), vanilla extract, and salt. Stir until all ingredients are well mixed.
  2. Fold in the mixed berries, reserving a few for topping later.
  3. Divide the mixture evenly into two jars or airtight containers.
  4. Seal the jars and refrigerate overnight (or at least 4 hours) to allow the oats to soften and flavors to meld.
  5. In the morning, give the oats a good stir and add a splash of almond milk if you prefer a thinner consistency.
  6. Top with the reserved berries and sprinkle almond slices on top before serving.

💡 Chef's Notes

Serve the oats in clear jars to showcase the beautiful layers of berries and almond slices on top. Add a sprig of mint for a pop of color!
