Ingredients

  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. In a medium bowl, combine the fresh blueberries, granulated sugar, lemon juice, and vanilla extract. Gently toss the blueberries until well coated. Set aside.
  3. In a separate large bowl, mix together the flour, rolled oats, brown sugar, baking soda, salt, and cinnamon until evenly combined.
  4. Pour the melted butter into the dry ingredients and stir until the mixture resembles a crumbly texture. Reserve about 1 cup of the crumble mixture for topping.
  5. Press the remaining crumble mixture evenly into the bottom of the prepared baking dish to form the base. Bake in the preheated oven for 10 minutes.
  6. After the base has baked, remove from the oven and spread the blueberry mixture evenly over the crust.
  7. Sprinkle the reserved crumble on top of the blueberries, making sure to cover them as evenly as possible.
  8. Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the crumble is golden brown and the blueberries are bubbly.
  9. Once baked, remove from the oven and let it cool in the pan for at least 15 minutes before lifting it out using the parchment overhang.
  10. Allow the bars to cool completely on a wire rack before cutting them into squares.

💡 Chef's Notes

Serve the crumble bars on a decorative platter, dusted lightly with powdered sugar and accompanied by a few fresh blueberries for garnish.
