Ingredients

  • 1 cup cooked quinoa
  • 1.5 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 0.5 cup breadcrumbs (preferably whole wheat)
  • 0.25 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • to taste Salt and pepper
  • as needed Olive oil spray (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
  2. In a large mixing bowl, combine the cooked quinoa, chopped broccoli, and shredded cheddar cheese.
  3. In a separate bowl, whisk together the eggs, minced garlic, onion powder, smoked paprika, salt, and pepper until well blended.
  4. Pour the egg mixture into the quinoa and broccoli bowl, followed by the breadcrumbs and Parmesan cheese. Mix everything together until fully incorporated; the mixture should be moist but firm.
  5. Using your hands, form small balls or patties with the mixture, about the size of a golf ball, and place them on the prepared baking sheet.
  6. Lightly spray the tops of the quinoa bites with olive oil to help them crisp up while baking.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and firm to the touch.
  8. Once baked, remove from the oven and let them cool slightly on the baking sheet before serving.

💡 Chef's Notes

These bites can be frozen and reheated for a quick snack.
