Broccoli Cheddar Quinoa Bites Simple and Tasty Treat
Ingredients
- 1 cup cooked quinoa
- 1.5 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 2 large eggs
- 0.5 cup breadcrumbs (preferably whole wheat)
- 0.25 cup grated Parmesan cheese
- 1 clove garlic, minced
- 0.5 teaspoon onion powder
- 0.5 teaspoon smoked paprika
- to taste Salt and pepper
- as needed Olive oil spray (for greasing)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
- In a large mixing bowl, combine the cooked quinoa, chopped broccoli, and shredded cheddar cheese.
- In a separate bowl, whisk together the eggs, minced garlic, onion powder, smoked paprika, salt, and pepper until well blended.
- Pour the egg mixture into the quinoa and broccoli bowl, followed by the breadcrumbs and Parmesan cheese. Mix everything together until fully incorporated; the mixture should be moist but firm.
- Using your hands, form small balls or patties with the mixture, about the size of a golf ball, and place them on the prepared baking sheet.
- Lightly spray the tops of the quinoa bites with olive oil to help them crisp up while baking.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and firm to the touch.
- Once baked, remove from the oven and let them cool slightly on the baking sheet before serving.
