Cajun Creamy Delight: Savory Salmon and Shrimp Dish
Ingredients
- 2 fillets salmon (6 oz each)
- 8 oz shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 0.5 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 tablespoon lemon juice

Instructions
- Sprinkle the Cajun seasoning over the salmon fillets and shrimp, ensuring they are evenly coated. Set aside for about 10 minutes to absorb the flavors.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and diced onion. Sauté for about 3 minutes until the onion becomes translucent. Add the minced garlic and cook for another minute until fragrant.
- Add the seasoned shrimp to the skillet and cook for about 3-4 minutes, until they turn pink and opaque. Remove the shrimp from the skillet and set them aside with the salmon.
- Pour the chicken broth into the skillet, scraping up any brown bits for added flavor. Stir in the heavy cream and bring to a gentle simmer. Allow the sauce to thicken for about 3-4 minutes, stirring occasionally.
- Add the cherry tomatoes and fresh spinach into the sauce. Cook for 2-3 minutes until the spinach wilts.
- Stir in the lemon juice and season with salt and pepper to taste. Return the salmon and shrimp back to the skillet, gently spooning the creamy sauce over the seafood. Cook for an additional 2 minutes to heat through.
- Plate the dish with the salmon and shrimp nestled in a bed of the creamy sauce. Garnish with freshly chopped parsley.
