Ingredients

  • 4 large russet potatoes, cut into fries
  • 2 cups shredded cheddar cheese
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes
  • 1 2 diced red onion
  • 1 2 pickles, chopped
  • 1 4 mayonnaise
  • 1 tablespoon Dijon mustard
  • to taste fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cut russet potatoes with olive oil, garlic powder, onion powder, salt, and pepper until well coated.
  3. Spread the fries in an even layer on the prepared baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.
  4. While the fries are baking, heat a skillet over medium heat. Add the ground beef, season with salt and pepper, and cook until browned, about 8-10 minutes. Drain any excess fat.
  5. Once the fries are done, remove them from the oven and sprinkle the cooked ground beef evenly on top. Follow with the shredded cheddar cheese; return to the oven for an additional 5-10 minutes or until the cheese is melted and bubbly.
  6. Remove the loaded fries from the oven. Immediately top with diced tomatoes, red onion, and pickles.
  7. In a small bowl, mix together mayonnaise and Dijon mustard. Drizzle this dressing over the loaded fries for extra flavor.
  8. Sprinkle freshly chopped parsley over the top for a pop of color and freshness.

💡 Chef's Notes

Serve the loaded fries directly from the baking sheet or transfer them to a large serving platter. Offer extra dressing on the side for dipping, and add small bowls of additional toppings for a DIY twist at the table!
