Cheesy Loaded Meatloaf Casserole Tasty Comfort Dish
Ingredients
- 1.5 lbs ground beef
- 1 cup bread crumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 unit egg
- 0.25 cup milk
- 1 cup shredded cheddar cheese
- 1 cup mashed potatoes
- 1 cup diced bell peppers
- 1 can cream of mushroom soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- to taste unit salt and pepper
- 1 cup additional shredded cheese
- to taste unit fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C) and grease a medium-sized casserole dish.
- In a large mixing bowl, combine the ground beef, bread crumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, Italian seasoning, and salt and pepper. Mix until well combined.
- Press the meat mixture evenly into the bottom of the prepared casserole dish to form a meatloaf base.
- Spread the cream of mushroom soup evenly over the meatloaf layer.
- Layer the diced bell peppers over the soup followed by the mashed potatoes, spreading it evenly across the top.
- Sprinkle the first cup of cheddar cheese over the mashed potatoes.
- Finally, add the additional shredded cheese on top (1 cup) for a golden, cheesy crust.
- Cover the casserole tightly with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
