Ingredients

  • 4 medium zucchinis, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup cottage cheese
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme)
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant. Remove from heat.
  4. In a large bowl, combine the sliced zucchinis, sautéed onion and garlic, cottage cheese, half of the cheddar cheese, and Italian herbs. Mix well and season with salt and pepper to taste.
  5. Transfer the zucchini mixture to a greased 9x13-inch baking dish, spreading it evenly.
  6. In a separate bowl, combine the breadcrumbs with the remaining cheddar cheese. Sprinkle this mixture over the zucchini casserole.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the zucchini is tender.
  8. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  9. Garnish with fresh chopped parsley before slicing and serving warm.
