Cheesy Zucchini Casserole Delightful and Healthy Dish
Ingredients
- 4 medium zucchinis, thinly sliced
- 1 cup shredded cheddar cheese
- 1 cup cottage cheese
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs (preferably whole wheat)
- 1 teaspoon dried Italian herbs (basil, oregano, thyme)
- to taste salt and pepper
- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant. Remove from heat.
- In a large bowl, combine the sliced zucchinis, sautéed onion and garlic, cottage cheese, half of the cheddar cheese, and Italian herbs. Mix well and season with salt and pepper to taste.
- Transfer the zucchini mixture to a greased 9x13-inch baking dish, spreading it evenly.
- In a separate bowl, combine the breadcrumbs with the remaining cheddar cheese. Sprinkle this mixture over the zucchini casserole.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the zucchini is tender.
- Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
- Garnish with fresh chopped parsley before slicing and serving warm.
