Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 2 cups fresh spinach leaves
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • for garnish fresh basil leaves

Instructions

  1. Season the chicken breasts with salt, pepper, and dried basil on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then add the halved cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until they start to soften.
  4. Stir in the fresh spinach, and cook until wilted (about 2 minutes).
  5. Return the cooked chicken to the skillet. Add the halved mozzarella balls and drizzle with balsamic vinegar. Cover the skillet and let it cook for another 2-3 minutes, or until the cheese melts slightly.
  6. Remove from heat and garnish with fresh basil leaves. Serve warm, spooning the tomato and spinach mixture over the chicken.

💡 Chef's Notes

Serve the dish in the skillet directly for a rustic presentation, or plate the chicken and top with the tomato and cheese mixture. Drizzle with extra balsamic reduction if desired for an added touch!
