Chicken Caprese Skillet Easy and Flavorful Meal
Ingredients
- 2 pieces boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 2 cups fresh spinach leaves
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon dried basil

Instructions
- Season the chicken breasts with salt, pepper, and dried basil on both sides.
- In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then add the halved cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until they start to soften.
- Stir in the fresh spinach, and cook until wilted (about 2 minutes).
- Return the cooked chicken to the skillet. Add the halved mozzarella balls and drizzle with balsamic vinegar. Cover the skillet and let it cook for another 2-3 minutes, or until the cheese melts slightly.
- Remove from heat and garnish with fresh basil leaves. Serve warm, spooning the tomato and spinach mixture over the chicken.

Serve the dish in the skillet directly for a rustic presentation, or plate the chicken and top with the tomato and cheese mixture. Drizzle with extra balsamic reduction if desired for an added touch!
