Ingredients

  • 4 ears fresh corn, husked
  • 2 tablespoons butter, softened
  • 1 lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • to taste salt
  • for garnish fresh cilantro, chopped
  • optional Cotija cheese, crumbled

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the softened butter, lime zest, lime juice, chili powder, smoked paprika, and salt until well combined.
  3. Spread the chili lime butter mixture evenly over each ear of corn, ensuring they are generously coated.
  4. Place the corn on the grill and cook for about 10-12 minutes, turning occasionally until the corn is tender and slightly charred.
  5. Remove the corn from the grill, and if desired, sprinkle with crumbled Cotija cheese and chopped cilantro for an added burst of flavor.
  6. Serve hot, garnished with additional lime wedges on the side for squeezing over the top.
