Ingredients

  • 4 ears fresh corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon cayenne pepper
  • 1 lime zested and juiced
  • 0.25 cup cotija cheese, crumbled
  • to taste salt
  • fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine the olive oil, chili powder, cayenne pepper, lime zest, and lime juice. Mix well to create a flavorful marinade.
  3. Brush the corn with the chili lime marinade on all sides, ensuring it's well coated. Sprinkle with salt to taste.
  4. Place the corn directly on the grill. Cook for about 10-15 minutes, turning every 3-4 minutes, until the corn is nicely charred and tender.
  5. Once grilled, remove the corn from the grill and let it cool slightly.
  6. While still warm, sprinkle the cotija cheese over the corn, ensuring it adheres to the grilled surface.
  7. Garnish with chopped cilantro for a fresh finish.
