Ingredients

  • 3 pieces ripe bananas, mashed
  • 1.33 cup melted coconut oil
  • 0.5 cup brown sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 0.5 cup dark chocolate chips
  • 0.25 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a mixing bowl, combine the mashed bananas and melted coconut oil, stirring until well combined.
  3. Add in the brown sugar and mix until smooth.
  4. Stir in the beaten egg and vanilla extract, ensuring everything is mixed evenly.
  5. Sprinkle the baking soda and salt over the mixture, then gently fold them in.
  6. Gradually add the all-purpose flour, mixing until just combined. Be careful not to overmix.
  7. Fold in the dark chocolate chips and walnuts (if using) until evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth it out with a spatula.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Once baked, remove from oven and cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Serve warm or at room temperature, sliced, with a smear of butter or a drizzle of honey for an extra treat. Garnish with a few extra chocolate chips or banana slices on the plate for a decorative touch.
