Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter
  • 0.25 cup honey or maple syrup
  • 0.33 cup unsweetened cocoa powder
  • 0.5 cup shredded unsweetened coconut
  • 0.25 cup chia seeds
  • 0.25 cup mini dark chocolate chips
  • 1 teaspoon vanilla extract
  • a pinch sea salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, cocoa powder, shredded coconut, chia seeds, and sea salt. Mix well.
  2. In a separate bowl, blend together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry mixture and stir until everything is evenly incorporated.
  4. Gently fold in the mini dark chocolate chips.
  5. Once the mixture is well combined, use your hands to form small balls (about 1 inch in diameter).
  6. Place the formed energy balls on a parchment-lined baking sheet.
  7. Refrigerate the energy balls for at least 30 minutes to help them firm up.
  8. Once firm, transfer to an airtight container and store in the fridge for up to a week.

💡 Chef's Notes

Arrange the energy balls in a small wooden bowl or plate, dust them lightly with extra shredded coconut, and serve as a healthy snack option for guests.
