Ingredients

  • 3 pieces ripe bananas, mashed
  • 0.5 cup tahini
  • 0.5 cup brown sugar
  • 0.25 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups all-purpose flour
  • 0.5 cup dark chocolate chips
  • 0.25 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas and tahini, mixing until smooth.
  3. Add the brown sugar, honey (or maple syrup), eggs, and vanilla extract to the banana mixture. Whisk until well combined.
  4. In a separate bowl, whisk together the baking soda, baking powder, salt, and flour.
  5. Gradually fold the dry ingredients into the wet ingredients, mixing just until combined. Avoid overmixing.
  6. Gently fold in the dark chocolate chips and walnuts (if using) until evenly distributed.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Once baked, allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

💡 Chef's Notes

Slice the banana bread and serve each slice with an additional drizzle of tahini and a sprinkle of chocolate chips on top for added flair. Enjoy with a cup of coffee or a glass of plant-based milk!
