Ingredients

  • 4 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 quarter teaspoon baking powder
  • 1 quarter teaspoon ground cinnamon
  • 1 eighth teaspoon salt
  • 3 tablespoons milk
  • 1 tablespoon vegetable oil
  • 1 half teaspoon pure vanilla extract
  • 1 tablespoon brown sugar
  • 1 teaspoon butter, melted
  • 1 half teaspoon ground cinnamon (for swirl)
  • 0 optional Cream cheese frosting for drizzling

Instructions

  1. In a microwave-safe mug, combine the flour, granulated sugar, baking powder, ground cinnamon, and salt. Stir to combine well.
  2. Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until you have a smooth batter.
  3. In a small bowl, mix the brown sugar and ground cinnamon together.
  4. Pour half of the mug cake batter into the mug, then drizzle the melted butter over it. Sprinkle the cinnamon sugar mixture on top evenly.
  5. Pour the remaining mug cake batter on top, covering the cinnamon sugar mixture.
  6. Microwave the mug cake on high for about 60-90 seconds, checking at the 60-second mark. It should rise and look set around the edges but slightly moist in the center.
  7. Let the mug cake cool for a minute or two before enjoying it warm.
  8. If desired, drizzle with cream cheese frosting for an extra treat.
