Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon
  • 3 tablespoons brown sugar
  • 1 4 cup cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. In a small bowl, combine the ground cinnamon and brown sugar. Set aside.
  5. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  6. For each pancake, pour about 1/4 cup of batter onto the skillet. Immediately sprinkle some of the cinnamon-brown sugar mixture on top of the pancake.
  7. Cook until bubbles form on the surface, about 2-3 minutes. Flip the pancake and cook for an additional 2 minutes, or until golden brown and cooked through.
  8. In another bowl, mix softened cream cheese, powdered sugar, and milk until creamy and smooth to create the glaze. Adjust milk as necessary for desired drizzle consistency.
  9. Stack the pancakes on a plate, drizzling the cream cheese glaze over the top.

💡 Chef's Notes

Serve with a sprinkle of additional cinnamon and brown sugar on top, alongside fresh berries or sliced bananas for added color and freshness.
