Ingredients

  • 1 cup water
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter
  • 1 cup all-purpose flour
  • 3 large eggs
  • as needed cup vegetable oil for frying
  • 0.5 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon

Instructions

  1. In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and butter. Bring this mixture to a boil over medium heat.
  2. Once boiling, remove from heat and quickly stir in the flour until the mixture forms a ball. Let it cool for about 5 minutes.
  3. Add eggs one at a time to the dough, mixing well after each addition until the dough is smooth and glossy.
  4. In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  5. While the oil is heating, transfer the dough to a piping bag fitted with a star tip.
  6. Pipe 4-6 inch strips of dough directly into the hot oil, cutting them with scissors. Fry until golden brown, about 2-3 minutes on each side.
  7. Use a slotted spoon to remove churros from the oil, and drain on paper towels.
  8. In a separate bowl, mix together 1/2 cup sugar and cinnamon. Roll the fried churros in the cinnamon sugar mixture while still warm.
