Cinnamon Sugar Donut Muffins Soft and Delicious Treats
Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 cup granulated sugar
- 1 large egg
- 0.5 cup buttermilk (or milk with ½ tablespoon vinegar mixed in)
- 0.25 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 0.5 cup granulated sugar (for topping)
- 2 teaspoons ground cinnamon (for topping)
- 0.25 cup unsalted butter, melted (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, combine the sugar, egg, buttermilk, melted butter, and vanilla extract. Whisk until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
- Divide the batter evenly among the muffin cups, filling each about ⅔ full.
- Bake for about 15-18 minutes, or until a toothpick inserted in the center comes out clean.
- While the muffins are baking, prepare the topping by mixing the granulated sugar and cinnamon together in a shallow bowl.
- Once the muffins are done, remove them from the oven and let them cool for 5 minutes.
- While still warm, brush each muffin with melted butter and roll them in the cinnamon sugar mixture until well coated.
- Place the coated muffins on a wire rack to cool completely.
