Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup granulated sugar
  • 1 large egg
  • 0.5 cup buttermilk (or milk with ½ tablespoon vinegar mixed in)
  • 0.25 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 0.5 cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)
  • 0.25 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, combine the sugar, egg, buttermilk, melted butter, and vanilla extract. Whisk until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. Divide the batter evenly among the muffin cups, filling each about ⅔ full.
  6. Bake for about 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the muffins are baking, prepare the topping by mixing the granulated sugar and cinnamon together in a shallow bowl.
  8. Once the muffins are done, remove them from the oven and let them cool for 5 minutes.
  9. While still warm, brush each muffin with melted butter and roll them in the cinnamon sugar mixture until well coated.
  10. Place the coated muffins on a wire rack to cool completely.

💡 Chef's Notes

Arrange muffins on a colorful cake stand and drizzle some chocolate sauce on the side for extra indulgence!
