Ingredients

  • 1.5 cups warm water (110-115°F)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 0.33 cup baking soda
  • 0.25 cup unsalted butter, melted
  • 0.5 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon
  • 1 pinch flaky sea salt (for sprinkling)

Instructions

  1. In a large mixing bowl, combine warm water, yeast, and sugar. Allow it to sit for about 5-10 minutes until it becomes frothy.
  2. Add the flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  3. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  5. In a large pot, bring 10 cups of water and the baking soda to a gentle boil.
  6. Punch down the risen dough and pinch off small pieces to roll into bite-sized balls (about 1-inch in diameter).
  7. Once the water is boiling, carefully drop the pretzel bites into the water, cooking in batches for about 30 seconds each. Remove with a slotted spoon and place on the prepared baking sheet.
  8. Brush the pretzel bites with melted butter, and in a small bowl, mix the sugar and cinnamon together. Sprinkle generously over the bites.
  9. Bake in the preheated oven for 12-15 minutes or until they are golden brown.
  10. Once done, remove from the oven and immediately sprinkle with flaky sea salt for an extra touch.
