Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon cinnamon
  • 2 tablespoons brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon cornstarch (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Peel the sweet potatoes and cut them into thin fries, about 1/4 inch thick.
  3. In a large bowl, toss the sweet potato fries with olive oil until they are evenly coated.
  4. In a small bowl, mix together the cinnamon, brown sugar, salt, black pepper, and cornstarch (if using).
  5. Sprinkle the cinnamon sugar mixture over the sweet potatoes. Toss again until all the fries are well coated.
  6. Spread the fries out in a single layer on the prepared baking sheet, ensuring they are not overcrowded for optimal crispiness.
  7. Bake the sweet potato fries in the preheated oven for 25-30 minutes, flipping them halfway through to ensure even cooking.
  8. Once they are golden and crispy, remove them from the oven and let them cool slightly before serving.
