Ingredients

  • 4 slices thick brioche bread
  • 2 large eggs
  • 0.5 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar
  • 1 pinch salt
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons butter
  • 1 serving Maple syrup for serving
  • 1 serving Powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, sugar, and a pinch of salt until fully combined and frothy.
  2. Preheat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, swirling to coat the surface.
  3. Dip each slice of brioche bread into the egg mixture, ensuring both sides are generously coated. Allow excess batter to drip off.
  4. Place the coated bread slices on the skillet, cooking for about 3-4 minutes on each side, or until golden brown and the center is set. Add more butter if necessary for cooking additional slices.
  5. While the toast cooks, prepare the mixed berries. You can leave them fresh or lightly macerate by sprinkling with a little sugar and letting them sit for 10 minutes to release their juices.
  6. Once the French toast is cooked to perfection, transfer it to plates and top it with the mixed berries.
  7. Drizzle maple syrup over the top and dust with powdered sugar if desired.

💡 Chef's Notes

Stack the French toast in a staggered manner for a beautiful display, and place the berries artistically on top, garnished with a mint leaf for a pop of color. Serve with an extra drizzle of syrup on the side.
