Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.5 cups granulated sugar
  • 0.5 cups unsalted butter, melted
  • 4 large egg yolks
  • 14 ounces sweetened condensed milk
  • 0.5 cups fresh key lime juice
  • 2 limes zest of
  • 1 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 serving Key lime slices and lime zest for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until crumbly and well combined.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake in the preheated oven for about 8-10 minutes, until lightly golden. Remove from the oven and allow to cool.
  4. In another mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth.
  5. Add the fresh key lime juice and lime zest to the egg mixture, and whisk until fully blended.
  6. Pour the lime mixture into the cooled crust and return to the oven. Bake for 15 minutes until set but still slightly jiggly in the center. Remove from the oven and cool completely.
  7. While the pie cools, whip the heavy cream in a mixing bowl until soft peaks form. Gradually add the powdered sugar, and continue to beat until stiff peaks form.
  8. Once the pie is completely cooled, spread the whipped cream evenly over the top.
  9. Garnish with key lime slices and additional lime zest for a pop of color and flavor.
  10. Chill the pie in the refrigerator for at least 2 hours before serving to enhance the flavors.
