Ingredients

  • 2 whole ripe avocados
  • 1 cup fresh cilantro leaves
  • 1 clove garlic, minced
  • 1 whole lime, juiced
  • 0.5 cup Greek yogurt
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 small jalapeño, seeded and minced (optional)

Instructions

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a food processor.
  2. Add the fresh cilantro leaves, minced garlic, lime juice, Greek yogurt, and olive oil to the processor.
  3. If you like a bit of heat, add the minced jalapeño now.
  4. Blend the mixture until it reaches a smooth and creamy consistency, scraping down the sides as needed.
  5. Taste the dip and season with salt and pepper according to your preference.
  6. If the dip is too thick, you can add a little water or extra lime juice to achieve your desired consistency.
  7. Transfer the creamy avocado cilantro dip to a serving bowl.

💡 Chef's Notes

Garnish with chopped cilantro and serve with tortilla chips or veggie sticks.
