Creamy Avocado Pasta Delightful and Easy Recipe
Ingredients
- 2 whole ripe avocados, pitted and peeled
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 cup fresh basil leaves
- 1 4 cup extra virgin olive oil
- to taste salt and pepper
- 12 oz whole grain spaghetti or your preferred pasta
- 1 2 cup cherry tomatoes, halved
- 1 4 cup parmesan cheese, grated (optional)
Instructions
- In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a blender or food processor, combine the avocados, garlic, lemon juice, fresh basil, and olive oil. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water to achieve your desired consistency.
- Taste the avocado sauce and add salt and pepper to taste. Blend again to incorporate the seasoning.
- In the pot you used to cook the spaghetti, add the drained pasta and pour the creamy avocado sauce over it. Toss everything together until the pasta is well coated with the sauce. If needed, add more reserved pasta water to loosen it up.
- Gently fold in the halved cherry tomatoes to the pasta, allowing them to warm slightly from the heat of the pasta.
- Divide the creamy avocado pasta onto plates. If desired, sprinkle with grated parmesan cheese and extra basil for garnish.
💡 Chef's Notes
For a vegan option, omit the parmesan cheese.
