Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded Monterey Jack cheese
  • 1 4 green onions, chopped
  • 1 1 red bell pepper, diced
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for serving tortilla chips or veggies

Instructions

  1. In a medium bowl, toss the shrimp with Cajun seasoning, ensuring they are evenly coated.
  2. In a skillet, heat olive oil over medium heat. Add the seasoned shrimp and sauté for 3-4 minutes until they turn pink and are cooked through. Remove from heat and set aside to cool slightly.
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
  4. Stir in the shredded Monterey Jack cheese, chopped green onions, diced red bell pepper, and garlic powder. Mix well to combine.
  5. Chop the cooked shrimp into smaller pieces (or leave them whole for a chunkier dip) and fold them into the creamy mixture. Season with salt and pepper to taste.
  6. Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled or room temperature with tortilla chips or fresh vegetable sticks.
