Ingredients

  • 4 fillets salmon
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 lemon juice

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and sear for 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the minced garlic, and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.
  5. Stir in the fresh spinach and cook until wilted.
  6. Pour in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and dried Italian herbs, stirring until the cheese is melted and the sauce is well combined.
  7. Squeeze in the lemon juice and return the seared salmon fillets to the skillet, spooning the sauce over each fillet.
  8. Cook for an additional 2-3 minutes to warm the salmon through.

💡 Chef's Notes

Serve the salmon on a plate with a generous spoonful of the creamy Tuscan sauce on top, garnished with fresh basil or parsley for an extra pop of color.
