Creamy Tuscan Salmon Delightful and Simple Recipe
Ingredients
- 4 fillets salmon
- 2 tablespoons olive oil
- to taste salt
- to taste pepper
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 cup heavy cream
- 0.5 cup grated Parmesan cheese
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- 1 lemon juice
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and sear for 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, add the minced garlic, and sauté for about 30 seconds until fragrant.
- Add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.
- Stir in the fresh spinach and cook until wilted.
- Pour in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and dried Italian herbs, stirring until the cheese is melted and the sauce is well combined.
- Squeeze in the lemon juice and return the seared salmon fillets to the skillet, spooning the sauce over each fillet.
- Cook for an additional 2-3 minutes to warm the salmon through.
