Crispy Zucchini Fries Flavorful and Easy Recipe
Ingredients
- 2 medium zucchinis, cut into fries
- 1 cup breadcrumbs (panko works best for extra crunch)
- 0.5 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 large eggs
- 0.25 cup all-purpose flour
- to taste Olive oil spray (or enough to lightly coat)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Set up a dredging station: In one bowl, place the flour; in another, whisk the eggs; and in a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Take each zucchini fry, coat it in flour, shake off the excess, then dip it into the egg, allowing any excess to drip off, and finally coat it in the breadcrumb mixture. Press slightly to ensure the coating adheres well.
- Place the coated fries in a single layer on the prepared baking sheet. Lightly spray them with olive oil to help them crisp up during baking.
- Bake in the preheated oven for 20-25 minutes, turning them halfway through, until they are golden brown and crispy.
- Remove from the oven and let them cool for a few minutes before serving to allow them to firm up.

Serve in a cone made from parchment paper or a rustic basket. Pair with marinara sauce or garlic aioli for dipping.
