Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 1 large egg
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar)
  • 2 cups apples, peeled, cored, and diced
  • 0.5 cup walnuts or pecans, chopped (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, mix the melted butter, egg, buttermilk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if the batter is slightly lumpy.
  5. Fold in the diced apples and chopped nuts, if using, until evenly distributed.
  6. Using a scoop or spoon, fill each muffin cup about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
