Delicious Apple Cinnamon Muffins Fresh and Easy Recipe
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.5 teaspoon salt
- 0.5 cup unsalted butter, melted
- 1 large egg
- 1 cup buttermilk (or milk with 1 tablespoon vinegar)
- 2 cups apples, peeled, cored, and diced
- 0.5 cup walnuts or pecans, chopped (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
- In another bowl, mix the melted butter, egg, buttermilk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if the batter is slightly lumpy.
- Fold in the diced apples and chopped nuts, if using, until evenly distributed.
- Using a scoop or spoon, fill each muffin cup about 2/3 full with the batter.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
