Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 0.5 cup cocoa powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup semi-sweet chocolate chips
  • 0.25 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until all ingredients are fully incorporated.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not over-mix.
  5. Fold in the semi-sweet chocolate chips and chopped nuts (if using) until evenly dispersed through the batter.
  6. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
  8. Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

💡 Chef's Notes

For a nuttier flavor, add walnuts or pecans.
