Ingredients

  • 1 pound chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 4 skewers if wooden, soaked in water for 30 minutes
  • pita bread, for serving
  • tzatziki sauce, for dipping
  • fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade bowl, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat your grill or grill pan over medium-high heat. If using wooden skewers, make sure they've soaked in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
  6. Once cooked, remove the skewers from the grill and let them rest for a minute.
  7. Serve the chicken souvlaki with warm pita bread and a generous dollop of tzatziki sauce. Garnish with freshly chopped parsley for added color.

For best flavor, marinate the chicken for up to 2 hours.
