Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup powdered sugar (plus extra for dusting)
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • 0.25 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 0.25 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper for easier removal.
  2. In a medium bowl, whisk together the flour, powdered sugar, and salt.
  3. Pour in the melted butter and mix until crumbly and combined. Press this mixture firmly into the bottom of the prepared baking pan to form a crust.
  4. Bake the crust in the oven for 15 minutes or until lightly golden.
  5. While the crust is baking, in a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
  6. Once the crust is done, remove it from the oven and pour the lemon filling over the hot crust.
  7. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly golden.
  8. Allow the bars to cool completely in the pan. Once cooled, lift them out using the parchment paper (if used) and dust with powdered sugar before cutting into squares.
