Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 2 cups hash browns, thawed (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 0.5 cup diced bell peppers (red and green)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste salt and pepper
  • optional fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs and milk until fully combined, then season with garlic powder, onion powder, salt, and pepper.
  3. In a greased 9x13 inch baking dish, spread the thawed hash browns evenly across the bottom. This will be the base of the casserole.
  4. Evenly distribute the cooked and crumbled sausage over the hash browns, followed by the diced bell peppers.
  5. Pour the egg mixture over the sausage, hash browns, and bell peppers, making sure it's evenly covered.
  6. Sprinkle the shredded cheddar cheese over the top of the mixture.
  7. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown and bubbly.
  8. Once done, remove from the oven and let it sit for about 5 minutes before slicing. This helps to hold the pieces together.
  9. Garnish with fresh parsley before serving, if desired.
