Ingredients

  • 1 cup cottage cheese (preferably full-fat)
  • 3 large eggs, separated
  • 1 4 cup almond flour
  • 1 4 teaspoon baking powder
  • 1 2 teaspoon garlic powder (optional)
  • to taste Salt and pepper
  • 1 tablespoon fresh herbs (e.g., chives or parsley), finely chopped (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and egg yolks. Mix until smooth.
  3. In a separate bowl, whisk the egg whites with a pinch of salt until they reach stiff peaks.
  4. Gently fold the almond flour, baking powder, garlic powder, and fresh herbs (if using) into the cottage cheese mixture.
  5. Carefully incorporate the whipped egg whites into the cottage cheese mixture, folding gently to maintain the airiness.
  6. Using a spatula, scoop the mixture onto the prepared baking sheet, forming round mounds (about 4-6).
  7. Bake in the preheated oven for about 25-30 minutes or until the tops are golden brown and spring back when lightly touched.
  8. Once baked, remove from the oven and let cool slightly before serving.
