French Carrot Salad with Lemon Dijon Dressing Delight
Ingredients
- 4 large carrots, peeled and grated
- 0.25 cup fresh parsley, finely chopped
- 0.25 cup finely chopped red onion
- 0.25 cup sunflower seeds (toasted)
- 0.25 cup raisins or dried cranberries
- 0.25 cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey or maple syrup
- to taste salt and pepper
Instructions
- In a large mixing bowl, combine the grated carrots, chopped parsley, red onion, sunflower seeds, and raisins or dried cranberries. Toss until evenly mixed.
- In a separate small bowl, whisk together the olive oil, Dijon mustard, lemon juice, honey or maple syrup, salt, and pepper until well combined and emulsified.
- Pour the dressing over the carrot mixture and toss until all ingredients are well coated.
- Let the salad sit for about 10 minutes to allow the flavors to meld together.
- Taste and adjust seasoning with extra salt or pepper if needed before serving.
