Ingredients

  • 4 large carrots, peeled and grated
  • 0.25 cup fresh parsley, finely chopped
  • 0.25 cup finely chopped red onion
  • 0.25 cup sunflower seeds (toasted)
  • 0.25 cup raisins or dried cranberries
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • to taste salt and pepper

Instructions

  1. In a large mixing bowl, combine the grated carrots, chopped parsley, red onion, sunflower seeds, and raisins or dried cranberries. Toss until evenly mixed.
  2. In a separate small bowl, whisk together the olive oil, Dijon mustard, lemon juice, honey or maple syrup, salt, and pepper until well combined and emulsified.
  3. Pour the dressing over the carrot mixture and toss until all ingredients are well coated.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld together.
  5. Taste and adjust seasoning with extra salt or pepper if needed before serving.

💡 Chef's Notes

Letting the salad sit for a few minutes enhances the flavors.
