Ingredients

  • 1 pre-made pizza dough or homemade if preferred
  • 1 cup marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup bell peppers (mixed colors), diced
  • 1 small red onion, thinly sliced
  • 1 cup spinach leaves, roughly chopped
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cup black olives, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for drizzling olive oil
  • for garnish fresh basil leaves, optional

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.
  2. On a lightly floured surface, roll out the pizza dough into a circle or rectangle, according to your preference. Transfer the dough to a parchment-lined baking sheet or a hot pizza stone.
  3. Spread the marinara sauce evenly over the dough, leaving a small border around the edges for the crust.
  4. Sprinkle the shredded mozzarella cheese generously over the sauce.
  5. In a bowl, combine the diced bell peppers, sliced red onion, chopped spinach, halved cherry tomatoes, and sliced black olives. Season with oregano, garlic powder, salt, and pepper. Toss to combine.
  6. Evenly distribute the veggie mixture on top of the cheese layer.
  7. Drizzle a small amount of olive oil over the top for added flavor and richness.
  8. Carefully transfer the pizza to the oven and bake for 12-15 minutes or until the crust is golden and crispy, and the cheese is bubbling.
  9. Once cooked, remove the pizza from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves if desired.
  10. Cut into slices and serve hot. Enjoy your delicious Garden Veggie Pizza!
