Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 tablespoons unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 teaspoon lemon zest
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the melted butter, minced garlic, thyme, rosemary, lemon zest, smoked paprika, salt, and pepper to create a savory garlic butter mixture.
  3. Pat the chicken thighs dry with paper towels, then season both sides generously with salt and pepper.
  4. Place the chicken thighs skin-side up in a baking dish or on a lined baking sheet.
  5. Pour the garlic butter mixture evenly over the chicken thighs, ensuring they are well coated.
  6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy (internal temperature should reach 165°F or 75°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
  8. Garnish with freshly chopped parsley for color and added flavor.
