Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • to taste Salt and pepper
  • 1 lb baby potatoes
  • 0.5 cup cheddar cheese, shredded
  • 0.25 cup cream cheese
  • 2 tablespoons sour cream
  • 1 tablespoon chives, chopped (for garnish)

Instructions

  1. Place the baby potatoes in a large pot and cover them with salted water. Bring to a boil and cook for 15-20 minutes or until fork-tender. Drain and return to the pot.
  2. Using a fork or a potato masher, gently smash the potatoes to flatten them slightly.
  3. Add the cheddar cheese, cream cheese, sour cream, salt, and pepper to the smashed potatoes. Mix until well combined and creamy.
  4. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  5. Season the steak bites with salt and pepper, then add them to the hot skillet in a single layer. Cook for 2-3 minutes without stirring.
  6. Stir the steak bites and add the remaining butter, minced garlic, thyme, and rosemary. Cook for another 2-3 minutes until the steak is browned and cooked to your preferred doneness.
  7. Once the steak is cooked, remove from heat.
  8. Serve the steak bites alongside the cheesy smashed potatoes, garnishing the potatoes with chopped chives.
