Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon red pepper flakes (optional)
  • to taste salt and pepper
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the cauliflower florets with olive oil, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and pepper. Toss well until the cauliflower is evenly coated.
  3. Spread the cauliflower mixture in a single layer on a baking sheet lined with parchment paper to avoid sticking.
  4. Roast in the oven for 25-30 minutes, turning halfway through, until the cauliflower is tender and golden-brown.
  5. Remove from the oven and immediately sprinkle the grated Parmesan cheese over the hot cauliflower, allowing it to melt slightly. Toss to distribute the cheese evenly.
  6. Transfer the roasted cauliflower to a serving dish and garnish with freshly chopped parsley.
