Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional for heat)
  • 0.5 cup grated Parmesan cheese
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the cauliflower florets, olive oil, minced garlic, garlic powder, dried oregano, red pepper flakes (if using), and a generous pinch of salt and pepper.
  3. Toss the cauliflower until it's evenly coated with the oil and seasonings.
  4. Spread the seasoned cauliflower in a single layer on the baking sheet, ensuring there’s enough space between the florets to promote even roasting.
  5. Roast in the preheated oven for about 25–30 minutes, turning the florets halfway through, until they're golden brown and tender.
  6. Remove the cauliflower from the oven and immediately sprinkle the grated Parmesan cheese over the hot florets.
  7. Return to the oven for an additional 5 minutes, or until the cheese is melted and slightly golden.
  8. Once done, remove from the oven and garnish with freshly chopped parsley before serving.

💡 Chef's Notes

Serve warm as a side dish or a tasty snack. For added color and flavor, squeeze some fresh lemon juice over the top just before serving!
